Traditional Pie Dough

Equipment

  • Food Processor

Ingredients
  

  • 12 Tbsp Unsalted Butter Cubed, Very Cold
  • C Lard or Vegetable Shortening Very Cold
  • 3 C All- Purpose Flour
  • 1 Tbsp Sugar
  • 1 Tsp Salt
  • ¼-½ C Ice Water

Instructions
 

  • Place the flour, sugar, and salt in the food processor fitted with the steel blade attachment. Pulse until combined.
  • Add the butter and lard to the food processor and and pulse about 8-12 times until the butter and lard are about the size of peas.
  • With the machine running, slowly pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. You may not need all of the ice water.
  • Dump the mixture onto a lightly floured piece of plastic wrap and press into a ball. Wrap in plastic wrap and place in the refrigerator for 30 mins.

Notes

If you do not want to use lard, replace the lard with butter.
This recipe makes 2 pie shells roughly 9-11 inches round.
This is a great freezer recipe. Wrap in plastic wrap and place in a sealed zipper bag. Freeze up to 9 months.
