Keto Waffles: The Perfect Addition To Your Low Carb Diet

Can I just say that we have tried MANY MANY different types of Keto Waffles and Pancake recipes. And this one definitely takes the cake! My whole family says that these waffles taste exactly like Waffle House Waffles! They are light and fluffy and simply PERFECT!

Equipment

  • Hand Mixer
  • Waffle Maker

Ingredients
  

  • 4 oz Cream Cheese softened
  • 4 large Eggs room temp.
  • 2 tsp Vanilla Extract
  • 4 TB Coconut Flour
  • 1 ½ tsp Baking Powder
  • 1 Tb Granulated Sugar Substitute I used Lakanto Monkfruit Sweetener
  • 1 Tb Butter melted

Instructions
 

  • Mix together the cream cheese, eggs, vanilla and melted butter.
  • In a different bowl, mix together the sugar, coconut flour, and baking powder.
  • Pour the batter into the waffle iron. Follow the measurements and instructions for your waffle iron. It will take approximately 2-3 minutes to cook the waffles….depending on your iron.
  • Top the waffles with your favorite toppings.

How to make Keto Waffles

Start by mixing together the cream cheese, eggs, vanilla and melted butter. In a separate bowl, mix together the coconut flour and the baking powder. Mix the dry ingredients into the wet ingredients. I let it sit for about 5-10 minutes.

The best tool for the job is a simple hand mixer. I like this one!

Keto Waffles

Pour the batter into a preheated waffle iron that has been sprayed with coconut oil. Follow the measurements and instructions for your waffle iron. It will take approximately 2-3 minutes to cook the waffles, depending on your iron. I prefer to use a Belgian Waffle Iron like this one!

One of the things I LOVE about this recipe is that they make fantastic freezer waffles. I usually make several batches of these yummy waffles and freeze them for later. They make a perfect quick and easy breakfast for those busy mornings.
